Mediterranean Farro Salad

Enjoy the fresh and vibrant flavors of the Mediterranean with this hearty Farro Salad! 

Ingredients:

  • 2 cups baby arugula
  • 1/2 cup cooked farro
  • 1/3 cup garbanzo beans
  • 2 sweet cherry peppers
  • a few splashes of balsamic vinegar (optional)
  • 2 tsps. olive oil
  • fresh herbs for garnish (basil or oregano leaves)

Instructions: 

  1. Arrange ingredients into a large bowl or plate and drizzle with balsamic and olive oil.
  2. Sprinkle it with a little salt and pepper to taste.
