Dark Chocolate Covered Fruits
Ingredients:
- 1 cup high quality dark chocolate, chopped
- 1 tablespoon coconut oil
Option for Dipping:
- 8 large strawberries (You can choose your own fruits)
- 1 crisp apple, cut into 6 slices
- 2 fresh apricots or nectarines, cut into 8 segments
- 1 banana, sliced into 1/2 inch-thick slices
- 2 tablespoons almond pieces, chopped
- 2 tablespoons unsweetened dried coconut
Instructions:
- Line a baking sheet with parchment paper.
- Melt chocolate with the coconut oil in a double boiler on the stovetop, or microwave for 30 seconds. Stir and add 15 seconds if needed.
- Dip strawberries halfway into melted chocolate, then sprinkle with nuts.
- Place it on the lined baking tray.
- Dip apples 1/3 of the way into melted chocolate.
- Sprinkle dried coconut on top.
- Place on the lined baking tray.
- Dip apricot segments halfway into melted chocolate then sprinkle with nuts.
- Place the baking tray with all the fruit in the freezer for about 15 minutes.
- When the chocolate is solid, you can remove from the freezer and serve.
