Dark Chocolate Covered Fruits

Ingredients:

  • 1 cup high quality dark chocolate, chopped
  • 1 tablespoon coconut oil

Option for Dipping:

  • 8 large strawberries (You can choose your own fruits)
  • 1 crisp apple, cut into 6 slices
  • 2 fresh apricots or nectarines, cut into 8 segments
  • 1 banana, sliced into 1/2 inch-thick slices
  • 2 tablespoons almond pieces, chopped
  • 2 tablespoons unsweetened dried coconut

Instructions:

  1. Line a baking sheet with parchment paper.
  2. Melt chocolate with the coconut oil in a double boiler on the stovetop, or microwave for 30 seconds. Stir and add 15 seconds if needed.
  3. Dip strawberries halfway into melted chocolate, then sprinkle with nuts.
  4. Place it on the lined baking tray.
  5. Dip apples 1/3 of the way into melted chocolate.
  6. Sprinkle dried coconut on top.
  7. Place on the lined baking tray.
  8. Dip apricot segments halfway into melted chocolate then sprinkle with nuts.
  9. Place the baking tray with all the fruit in the freezer for about 15 minutes.
  10. When the chocolate is solid, you can remove from the freezer and serve.
