Pumpkin Spice Energy Balls
Ingredients:
- 12 Medjool dates, pitted
- 1 1/4 cup pecans
- 1/4 cup (heaping) old-fashioned rolled oats
- 1/2 teaspoon (heaping) pumpkin pie spice
Instructions:
- Mix all ingredients in food processor
- If the mixture is too crumbly, the dates might be too dry so soak a few dates in water for 10-15 minutes then process those dates and mix into the mixture with a spatula.
- Form mixture into balls, using a spoon and your clean hands
Make your own Pumpkin Spice:
Combine:
- 1 tablespoon Ceylon cinnamon
- 1/2 tablespoon ground ginger
- Pinch of ground nutmeg
- Pinch of ground cloves or allspice
*Measurements can be adjusted, to taste
