Fennel Avocado Salad
Ingredients:
- 1 tablespoon olive oil
- 2 teaspoons lemon juice
- 1/2 teaspoon fine sea salt
- 1 ripe avocado
- 1 bulb fennel (trimmed and sliced as thinly as possible)
- 1/4 small red onion
- Freshly ground black pepper, to taste (optional)
Instructions:
- In large bowl, whisk together oil, lemon juice, and salt.
- Chop avocado in small pieces and toss to coat avocado in the dressing, mashing some of the avocado, if you like.
- Thinly slice fennel and red onion. Add to bowl and toss evenly with the dressing.
- Garnish with fennel fronds and add salt and pepper to taste.
