Fennel Avocado Salad

Ingredients:

  • 1 tablespoon olive oil
  • 2 teaspoons lemon juice
  • 1/2 teaspoon fine sea salt
  • 1 ripe avocado
  • 1 bulb fennel (trimmed and sliced as thinly as possible)
  • 1/4 small red onion
  • Freshly ground black pepper, to taste (optional)

Instructions:

  1. In large bowl, whisk together oil, lemon juice, and salt.
  2. Chop avocado in small pieces and toss to coat avocado in the dressing, mashing some of the avocado, if you like.
  3. Thinly slice fennel and red onion. Add to bowl and toss evenly with the dressing.
  4. Garnish with fennel fronds and add salt and pepper to taste.
